New menu
In the new menu of the centrally located Italian restaurant, La Pappardella, we have sought out traditional dishes from the different regions of Italy to bring you the very essence of authentic Italian cuisine.
To do this, we use crafted Italian milled flour for our stuffed pasta, our mozzarella is ‘Fior di latte’ from the Campania region, the tomatoes, as you would expect, are from San Marzano, as well as products from the best Valencia market gardens, which we use to create our starters, salads and pastas.

THE CURTAIN RAISER
<<Antipasti>> is a traditional type of Italian gastronomic pastime consisting of an aperitif before eating. It can be served hot or cold and as such, whets the appetite without overpowering the senses.

The <<Piadina>> is a traditional dish from central northern Italy, specifically the Marches region.
Piadina dough forms the basis of many different recipes, and ours comes from Pésaro, a small village where Ornella, the mother of a childhood friend of Laura (one of the founders of La Pappardella), lived. She bequeathed us the secret of her piadina dough.

WE LOVE OUR WORK
Consequently, in the best Italian tradition, we make our homemade stuffed pasta fresh each morning.
There are only two ingredients to a traditional pasta: flour and egg.
We always use a flour that is slightly stronger than regular flour to get a slightly thicker texture and that therefore holds its shape better. Plus, we add a pinch of salt to the dough to enhance the flavour.

THE HEART OF LA PAPPARDELLA
Our pastas are carefully selected by our chef, Vincenzo Cancilleri.
We use <<Rummo>> pasta from Naples (Campania region), a <<hard-grain>> pasta that cooks perfectly, allowing us to serve pasta <<al dente>>.
Other pastas we serve give their name to our restaurant: <<Pappardelle>> are egg pasta made in the <<Belli>> artisan <<pastificio>> (pasta factory), located in Foligno, in the province of Perugia.
The <<Strangozzi>>, is also made at the <<Belli>> artisan <<pastificio>>, and is made exclusively with egg white and really is to die for.
Among our specialities, why not try some of the great classics that have been a part of our menu since 1998, such as the <<Strangozzi Mixat>>i or the <<Pappardelle del Levriero>>, the latter, a recipe belonging to Aurelia, the mother of Paola (another founder member), a wonderful <<mamma>> and great Italian chef!.

We are passionate about pasta, so much so that it has become our signature dish. To give you an idea, our a la carte menu includes 18 different pasta specialities! But let’s take you back to the start, which is where our passion for this wickedly delicious pasta began. It has been loved by diners since 1997. The secret to our success is the use of artisan milled flour from Italy to make our stuffed freshly homemade pasta, as well as “fior di latte” mozzarella from the Campania region. Out tomatoes are also top quality, such as the exquisite San Marzano, especially grown to give sauces and appetizers that exquisite taste.
